In the quiet coastal strip of Tejakula, Buleleng, a centuries-old tradition continues to defy the march of modern industrialization. Unlike mass-produced salt, Tejakula salt is harvested using the 'Palung'—hollowed-out coconut tree trunks that serve as natural evaporation beds.
The process begins before dawn, as farmers carry heavy buckets of seawater to specially prepared sand plots. After the sand is saturated and dried, the concentrated brine is filtered through clay and finally poured into the Palung. Under the intense North Bali sun, the water evaporates, leaving behind crystalline flakes of pure, mineral-rich salt that are prized by gourmet chefs worldwide.
